There’s something truly magical about stuffed potatoes. Crispy on the outside, soft and creamy on the inside, and filled with delicious ingredients—it’s the perfect combination of textures and flavors! Whether you’re serving them as a side dish, a hearty snack, or even a main course, these stuffed potatoes are guaranteed to impress. Today, I’m sharing my favorite recipe that’s simple, satisfying, and packed with flavor.

Servings: 4 portions
Ingredients:
- 4 large baking potatoes
- 2 tbsp butter
- 1/4 cup milk or cream
- 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 4 slices of crispy bacon, crumbled
- 2 tbsp chopped fresh chives or green onions
- 1 clove garlic, minced
- Salt and pepper to taste
- 1/4 tsp paprika (optional, for extra flavor)
- 1 egg yolk (for extra creaminess, optional)
Instructions:
- Bake the Potatoes
Preheat your oven to 200°C (400°F). Wash the potatoes, pat them dry, and poke them a few times with a fork. Place them on a baking tray and bake for about 45-50 minutes until tender. Let them cool slightly. - Prepare the Filling
Once the potatoes are cool enough to handle, cut off the top third of each potato. Carefully scoop out the insides into a bowl, leaving a thin shell so the potatoes hold their shape. - Mash and Mix
Mash the scooped-out potato with butter, milk (or cream), and cheese until smooth and creamy. Add garlic, crispy bacon, chives, salt, pepper, and paprika. For extra creaminess, mix in the egg yolk. - Stuff the Potatoes
Spoon the filling back into the potato shells, piling it up slightly for a nice presentation. Sprinkle a little extra cheese on top. - Final Bake
Return the stuffed potatoes to the oven and bake for another 10-15 minutes until the tops are golden and slightly crispy. - Serve and Enjoy!
Garnish with more fresh chives and serve hot. These stuffed potatoes pair perfectly with sour cream, a fresh salad, or even a juicy steak!
